Since we are dieting, tonight I made a real nice lentils, rocca, turkey and Serano ham salad... Fast, simple. packed with proteins and really yummy...
- 1 can of lentils
- 4 radishes
- half of bell pepper
- half of red onion
- a handful of rocca salad
- three slices of Serano ham
- aprox 150-200 gr of shredded meat from an oven roasted turkey breast or wing
- 2 tblsp olive oil
- 3 tblsp vinegar
How to make it:
1. Drain the lentils and put them in a bowl. Cut in quarters the radishes. Cut the bell peppers in small pieces. Do the same to the onion.
2. Add all of them on top of the lentils. Add the rocca salad and then the shredded turkey meat. Pour on top the olive oil and the vinegar and give it a good stir.
3. Place the salad on the serving plate and arrange on top the Serano ham slices. Enjoy it...Is very good for you... ;)
