Affogato is a dessert which involves coffee over vanilla ice cream... This affogato has something extra: nice cookies and yummy cherries and I can guarantee you that the coffee and cherries mixture tastes heavenly.
What is more, it takes just minutes to prepare it and the result is always very tasty. We all have days when we simply don't know what to scoop out of the sleeve for a fast and good dessert and this recipe is the perfect one.
I love serving this dessert in mismatched cups and plates for a Alice in Wonderland effect :)
Remember that if you make it for children you should replace the coffee in the recipe with a cereal drink which resembles coffee in taste ( in Romania there is a brand like this called Inka. I also drink it sometimes on the days when I exceed my coffee limits : P )
What you need:
- vanilla ice cream
- store bought or home made cookies
- cherry ( sour cherries could work also) compote
- instant coffee or espresso
- 50-100 gr sugar ( depending how sweet you like it to be)
- chocolate for grating on top
How to make it:
1. Drain the cherries and reserve half of cup of their juice. Put them in a pan together with the reserved juice and with the sugar and bring all to a boil.
2. Boil the cherries about 12-15 minutes, until the syrup is thickening slightly. Put the pan aside and move to the next step.
3. Prepare some serving cups ( as I said, I prefer serving this in mismatched coffee cups) and break some cookies inside them. Don't crush the cookies too small, as you will want to feel them in the final dessert.
4. Prepare a strong coffee from some instant coffee and hot water and set it aside. On top of the broken cookies in the cup put about one tablespoon of cherries from the pan.
5. Put a ball of ice cream in the cup on top of the cherries and pour coffee over it.
6. Decorate on top with some grated chocolate, a little bit of the cherries syrup from the pan and a full cookie... Now is time to dream :)
