And the shrimps are packed with proteins and low in fat. This shrimps recipe can be served with rice or pasta as well.
All healthy ingredients in a delicious meal which is also easy to cook :)
What you need ( for 2 people plus a leftover lunch for the next day):
For cous-cous salad:
- 300 gr cous-cous
-red bell pepper or kapia pepper
- a bunch of dill
- a bunch of parsley
- 10-11 cherry tomatoes
- olive oil
- lime or lemon juice ( plus more for serving)
- 350 ml chicken stock ( you can make your own stock by boiling pieces of chicken and some veggies together or buy it)
- pomegranate reduction sauce ( this is the ultimate secret ingredient. Thank you Mali for sharing this with me :) You can find it at most supermarkets these days.)
- pepper
For shrimps:
- 3 tablespoons of olive oil
- 10-12 big size shrimps ( if you use frozen, then defrost them beforehand)
- 4 cloves of garlic
- chilli flakes
- salt and pepper
-a few springs of dill chopped
- white wine (optional)
How to make it:
1. Bring the chicken stock to a boil. Put the cous-cous into the stock and take the pot off fire, cover it and let it stay for about 5-7 minutes. The cous-cous will absorb the stock and cook itself. You do not need to boil cous-cous.
3. Add the cous-cous on top of the chopped vegetables in the bowl and give them a good stir.
4. Add olive oil, lime juice and the pomegranate reduction ( i put a lot of it because it tastes wonderful with the cous-cous)
5. Stir again your cous-cous salad. Taste it to see if you would like more olive oil, lime juice or pomegranate. Season with black pepper and put it aside.
6. Now, to prepare the spicy shrimps, heat some olive oil in a pan and add to it the garlic cut in small pieces.
7. Add the shrimps to the pan and let them cook for a while. Then add some sea salt, some pepper and some chilli flakes ( the more chilli, the hotter your shrimps will be). Add the chopped dill as well. If you want you can also add about 3 tablespoons of good quality dry wine. Let the shrimps cook for a while until the sauce in the pan reduces a little.
8. Arrange the cous-cous salad on your serving plate and put next to it the cooked shrimps. Drizzle some of that yummy sauce from the pan on top of the shrimps and be ready to be wowed :)... Easy to prepare, light and delicious :)...
