Cheesecake Stuffed Strawberries

I have fruits, fruits, fruits on my mind...I have summer and warm weather on my mind... I have fun and sunny days on my mind...
So, instead of wondering when will these days become warmer,  I decided to play with some strawberries to remind myself about the smell of summer...
This is how these Cheesecake Stuffed Strawberries came out... You can have it all in one single sweet bite: sweet and creamy cheese, wonderful biscuit crumbs and freshness of the strawberries


What you need:

- strawberries
- cream cheese
- powder sugar
- digestive biscuits
- vanilla essence



How to do it:

1. Cut the stem of the strawberries and then make a little hole inside with a paring knife ( you may find, when you cut the stem of the strawberries that many of them are already hollow inside, so this will make your work less). All of the pieces that you take out, you can have the privilege of eating them :)))


2. If you want your strawberries to stand on the plate, then cut a piece of the bottom of the fruit too.

3. Hollow all of your strawberries and put them aside for now.

4. Now prepare your cream cheese. Mix the cheese with 2-3 tsp of powder sugar and the vanilla essence. If your strawberries are not very sweet, you can make the cheese sweeter ( is a matter of taste). Use the cream to fill all of your strawberries, using a piping bag.


5. After that crush the digestive biscuits in a food processor.
6. Dip the top of the strawberries in the biscuit crumbs or sprinkle on them the biscuit crumbs. If you want, you can dip the bottom of your strawberries into some melted chocolate or drizzle them with some chocolate or fruit sauce ( do I have to say that this adds extra calories ?! :P )
How not to love these?!?! :)
