This is a soup that some people like...I am one of them..Is sweet and savory at the same time...It has the full taste of corn and, what I like most about this recipe, is that is on the healthy side ( many other recipes call for cooking cream and lots of butter, while this one has only one knob of butter)....
What you need ( for 2 portions):
- 500 gr corn kernels ( fresh or frozen)
- 2 scallions ( green onions)
- 1 piece of tortilla
- 2 wedges of lemon or lime (optional)
- 2 small sausages
- a few pieces of butter
- salt, pepper
- hot chilli powder (optional)
How to make it:
1. Boil the corn until it becomes tender and then drain it reserving about 1 cup of water in which the corn boiled.
2. Put the boiled corn in the blender. While blending it, add the reserved water. Add it slowly by slowly, so that you can control how creamy you want your soup to be. While blending it, season the corn with salt and pepper according to taste.
3. Pour the blended corn in a pot which you set on medium to small fire and add the butter, mixing to melt. You can also add the chilli powder if you like. Mix while you bring to boil the corn, but be careful so it doesn't spit on you :))) Thick and hot liquids like this have the habit of jumping out of the pot when boiled
4. In the meanwhile cut your tortilla in quarters and put it on a hot grill until it cooks and gets these nice grill marks. Like this it will become crunchy for serving it with the soup.
On the same grill put the small sausages to cook. Once they are done take them off and cut them in slices. Separately cut your scallions ( green onions) in small pieces.
5. For serving the soup, pour some of it in your serving plate, top it with the sliced scallions and sausage and add to the side the grilled tortilla pieces and a lemon .
