Greek Style Bell Peppers

If you like light starters, then you will love these Greek Style Bell Peppers...They are so easy to prepare, smells wonderful and it tastes heavenly...

And here is the recipe:

What you need ( to fill up one bell pepper cut in half):
- 1/2 red onion, peeled and sliced ( you can cut it in smaller or bigger pieces, depending on your taste)
- a piece of zuchinni cut into cubes( please leave the peel on. Most of the vitamins are in the skin of fruits and veggies. Don't waste it!! )
- 2-3 cherry tomatoes ( one I cut in half and two I left full. They look so much more nicer full when they are roasted)
- aprox 6 cubes of feta cheese ( always buy good quality cheese. Otherwise it won't be creamy and nice)
- a few leaves of oregano or basil broken into pieces
- olive oil
- one bell pepper cut in half and with the seeds removed ( chose your color. If you make more, you can use different colors of bell peppers. It will look very sweet)


How to make it: 


1. Preheat the oven to 180 degrees. In the meanwhile mix the onion, zuchinni cubes, cherry tomatoes, feta cubes and the oregano or basil leaves and add some olive oil, salt and pepper. Do not use a spoon or fork to mix, or your hand so you don't crush the feta cheese cubes. Just move the bowl around...it will do the job.

2. Fill each half of the bell pepper with the prepared mixture and wrap them in aluminum foil and pop them on the middle rack of the over for about 45 minutes ( until the bell peppers are soft. You will also know they are done when they start to smell heavenly :) )

3. Serve it hot and juicy... Have fun ;)
