This is a dressing that I almost always make when I want to serve green salad..It works wonders and everybody who tasted it, liked it...So, it became my favorite.
What you need to know when making a dressing is that a good one involves the following: oil , an acid ingredient and a flavor... To make it more clear, for example you can mix olive oil ( oil part), freshly squeezed lemon or lime juice, balsamic vinegar, plain vinegar etc ( this being the acid part) and sesame oil or a diced shallot or honey, or mustard ( this being the flavor part).
So, is a simple rule of three for a basic dressing... Want to get it bigger?! then by all means, please have fun with it..use yogurt, cheese, herbs !
So, for my favorite honey and mustard dressing the ingredients are very obvious: olive oil, balsamic vinegar, mustard and honey.
What you need:
- 2-3 tblsp of extra virgin olive oil
- 1-2 tblsp of balsamic vinegar ( add it on top of the olive oil)
- 1 tsp of mustard ( I really like to use Moutarde a L'Ancienne with the mustard seeds full inside. Looks so pretty in the salad and tastes really good). Add this also in the same bowl with the olive oil and the vinegar
- 1 tsp of good quality honey ( The honey I am using at the moment is from Turkey. Is made from pine. But you can use any honey that is according to your taste)
How you do it:
Mix all ingredients in the same bowl and pour it over your favorite salad. For example I love it over green salad mixed with cherry tomatoes, bell peppers, boiled egg, some grilled turkey breast and a few dried cranberries... Yummy ...
But I can assure you that it will make even a plain green salad taste wonderful...
