Mini Palmiers

These little crunchy cookies are extremely easy to make and hard to stop eating...Give them a try :)


What you need:

- a sheet of frozen puff pastry ( defrost it in the fridge overnight)
- 55 gr granulated sugar
- 15 gr cinnamon
- 40 gr melted butter

How to make it:

1. Preheat the oven to 200 degrees Celsius. Line a large baking tray with baking paper and put it aside.
Combine in a bowl the sugar with the cinnamon and sprinkle half of it onto a clean surface. Place the puff pastry on top of the cinnamon sugar and sprinkle on top of it with the other half of the cinnamon sugar and gently roll over the pastry with a rolling pin to secure the sugar and brush with half of the melted butter over it and then cut the sheet in half.



2. Use your fingers to roll one side of the pastry sheet towards the center and then roll the other side until the two sides meet in the center. You should roll both sides tightly. Do the same to the second piece of pastry.


3. Brush the top of the two rolls wit the remaining melted butter and wrap the rolls in stretch film and put them in the freezer until firm ( about 15 minutes)


4. Take the pastry rolls out of the freezer when firm and cut them in slices and arrange the slices cut side up on the prepared baking tray leaving about 1-2 cm between each. 


5. Bake them for about 8-10 minutes and then take the tray out and turn each palmier on the other side and bake again for another 1-2 minutes. Let them cool on the tray and then keep them in an airtight container.

  1. Natalia, thanks a lot for this one. I adore palmiers and this recepie is really great. I had tried to bake them without any receipe, They came out so and so, I am sure that with this receipe they will be simply great. Thanks again.
    On the other hand I would like to express my appreciation for all your receipies, they are all great. I did not have time to try any of them but even by looking at the pictures one can understand that they are delicious. I think I am slowly slowly becoming a fan of yours :))
